Sandra Moretz, a dietitian from Tift Regional, joined us on Good Day on 11-11-12.
She shared some recipes for an alternative roasted sweet potato and green beans with almonds. Here are the recipes:
Roasted sweet potato
4 large sweet potatoes cut into chunks
1/4 cup water
1 Tbsp Brown Sugar
2 tsp Olive Oil
2 tsp Honey
1/2 tsp cinnamon
Whisk all but the sweet potatoes together and toss with sweet potatoes. Bake covered with foil for 30 minutes at 350 degrees. Uncover, stir, and bake for another 15 minutes.
Green beans with almonds
1 lb fresh or frozen whole green beans
1 Tbsp Olive Oil
1/4 cup sliced almonds
1 clove chopped garlic
1/4 tsp salt, optional
1 tsp lemon juice
Boil green beans in 3 qts water until bright green and tender, 3-4 minutes. Drain and place in ice water, then drain. Heat oil in skillet; add sliced almonds and cook until lightly toasted, about 4 minutes. Add the garlic and cook 1 minute until browned. Stir in lemon juice. Add green beans and toss until coated. Season with salt and toss until heated through.
