Chef Todd White from Albany Tech was on Good Day to talk about how to 'lighten up' your holiday favorites! And he gave us a recipe for a Healthier Sweet Potato Casserole. Here's what you need:

Healthier Sweet Potato Casserole
Serves 8-10 people
2lbs peeled, diced, cooked, and cooled sweet potatoes
2 egg whites
1 cup pecans
1/2 low fat milk
1/2 cup sugar free maple syrup
1/2 cup coconut oil
1/2 cup brown sugar
1 tsp ginger
1 tsp all-spice
1 tsp cinnamon
1 cup sugar free marshmallows
Pinch of salt
Pre-heat oven to 350 Degrees

Hold back half of the brown sugar, pecans and marshmallows. Combine the rest of the ingredients into a mixer and whip it all together. Spray a casserole dish with pan spray. Then pour mixed items into the dish. Mix the brown sugar and pecans together, and then sprinkle over the top of the casserole. Baked uncovered for 20-30 minutes or until pecans brown. Top with marshmallows return to oven for 5 minutes. Then enjoy!
